While on a road trip exploring the north coast of Trinidad, we stopped at Maracas Beach for lunch. For those who don't know, bake and shark is a beach delicacy and an absolute must-have when visiting Trinidad. There are a number of bake and shark vendors on Maracas Beach but we chose Richard's, as that is where we normally go. The line was long but it is worth the wait! The seating is right on the beach so the view is spectacular with the sound of music and the sea in the background.

I have a fish allergy so I opted for bake and shrimp instead. The bake is fried and cut in half with fried shrimp inside. The bake and shrimp comes "as is" and then you add all your toppings. I added coleslaw, pineapple, cucumber, lettuce, chadon beni sauce, tamarind sauce, pepper sauce and garlic sauce. Chadon beni sauce is made with culantro, which is great to season food with. If you like pepper sauce, be careful because this pepper is not for the weak! I would suggest starting with just a little to see if your mouth can stand the test...those who know, know! All in all, the blend of flavours with all the toppings took this "sandwich" to a whole new level. Since you add the toppings yourself, you can make it exactly as you like it! I didnt leave any bit in my box and was left feeling very full and satisfied. To wash it down, I had a Caribe Pearsecco, which is a pear-flavored Prosecco-style cider.

Let me tell you, it is worth the drive through the mountains to indulge in this goodness. You can thank me later! 😉
